The food I cook is inspired by everything we love to cook and eat. One of my favorite parts of my career has been the rare times I get to show my family and friends what I’ve spent countless hours learning and mastering.
And at the end of the day this is what is important to chefs: great food. Inspired food. The food we want to make. The results, the fruits of our labor; that is what drive us. What keeps us going.
When I cook at home, my girlfriend always tells me to “keep it simple.”
It has become kind of a joke when she says it now because she knows that’s not what I do. I love the phrase “everything worth doing is worth overdoing.”
Obviously, this is extreme. But, when it comes to cooking, taking those extra steps and adding those extra elements takes a dish from good to great.
That’s what I’m all about.
